Mel’s Mac and Cheese

Who is here for the cheesy sides? 🙋🏻‍♀️Mel’s Mac and Cheese is about as simple as you can get for a holiday side and it is soooo good. Literally just combining 4 ingredients! You will need…

1 can of cream-style corn
1 can of sweet corn (don’t drain it!)
1 cup of elbow macaroni
6-8 oz of cubed processed cheese
Salt and pepper to taste

For the crunchy topping…
3 cups corn flakes, slightly crushed
1 stick of melted butter

1 TBS chopped fresh parsley (optional)

Combine the first four ingredients in a mixing bowl, adding desired salt and pepper. Pour into a buttered 9×9 baking dish. Sprinkle the cornflakes evenly over the top. Drizzle the butter on top of the cornflakes. Cover with foil and bake for 1 hour at 400, removing foil for the last 10 minutes to brown the top. Sprinkle with fresh parsley if desired!
