Pink Hummus for the holiday win!

Dazzle your friends with this super-pretty appetizer! It’s only two ingredients (ok, ok, not counting the garnishes) plus you can have it with veggies OR carbs, so you are winning, winning, winning your holiday get-together. If you’re not going to a holiday get-together, you can just impress yourself.

You will need…

1 10 oz tub of hummus (I recommend plain so the color shows up better)

3-5 TBS beet juice (I just used some from a can and gave the rest to my father-in-law who happens to love beets)

Stir the ingredients together in a mixing bowl with a spatula. Transfer to a serving dish. Garnish with a swirl of olive oil, and a sprinkle of thyme or tarragon. Easy peasy, super pretty! Used as much beet juice as you like to achieve your desired color.

Serve with pita chips and fresh veggies, yum!
